first_imgBench InternationaleventsnetworkingSkal International Sydneytravel industry So authentic was Skål International Sydney’s aim for its latest networking dinner, held on Wednesday 11 April, that not only was Africa aficionado and Bench International md, Martin Edwards, engaged as Guest Speaker, but the restaurant hosting the event was asked to research and create a menu of delicious Kenyan fare, to showcase the country which is hosting the Skål World Congress, in Mombasa, later in the year.“We wanted to hold an African themed event” said Walter Nand, Skål International Sydney President, “but we couldn’t find a suitable venue with African cuisine so we asked The Apprentice if they could do it”.The Apprentice Restaurant Student teamThe Apprentice Restaurant is TAFE Ultimo’s training restaurant, and the menu, thanks to the talents of the chefs and the hospitality team, garnered high praise, indeed, from Martin Edwards.“The food here has been fantastic, it’s probably the best Kenyan cuisine I’ve had, and I’ve been [to Kenya] a few times,” he said.Entree – Marinated grilled chickenGuests began with an entree of Marinated Grilled Chicken, charred corn heirloom tomato and bean salsa, followed by Spicy Goat Stew with rice and roast vegetables, and dessert of Coconut and Sweet Potato Pudding, passionfruit ice-cream and plantain bananas.Martin Edwards provided guests with an overview and update on destination Africa – including pricing, availability, safety, and stability of the region – while providing his own expert insights into tourism trends and challenges in Africa, and personal tips on making the most of an African adventure.Suggesting low season travel in Africa is as rewarding as high season, Mr Edwards succinctly made the point that, “… when you’re looking for an elephant, it doesn’t matter if the grass is long or short, you’ll see the elephant!”“Price doesn’t dictate the experience. After seeing the positive impact of the sponsorship of these TAFE NSW Tourism and Hospitality students, Skål Sydney has committed to continue its fundraising to provide sponsorships again for students studying in 2018.
